Ampalaya Tomato Tofu Scramble


Make it!!!

1 square tofu (squeeze the water out by using paper towel and then break to pieces) 
1 clove of garlic
1 small onion 
1/4 teaspoon turmeric powder
1/2 teaspoon salt
1 teaspoon sesame oil

Saute garlic and onion in hot sesame oil. Add in tofu and cook for 2 minutes. Sprinkle turmeric powder and cook for another 2 minutes. Set aside. 

1 ampalaya (bittergourd)sliced thinly
2 cloves garlic crushed and chopped
1 small red onion sliced
1 tomato sliced
1 teaspoon salt
1 teaspoon coconut sugar
 a pinch of ground pepper
1 tablespoon healthy vegetable oil of your choice
2 tablespoons water

Saute garlic in hot vegetable oil. Add garlic and onion until wilted. Add tomatoes and cook for 1 minute. Add in ampalaya and cook for 2 minutes. Add salt and pepper and water so the veggies will not go too dry. Stir, cover and cook for another 2 minutes. Sprinkle with ground black pepper and coconut sugar. Add in the tofu scramble and cook for another 1 minute. Serve and eat away!!!
